This is an amazingly simple but beautiful creation. Jaime at Sophistimom says she "threw [it] together" to go with sloppy joes! The cucumber ribbon salad looks artistic, doesn't it? The cucumbers are sliced with a vegetable peeler, and then tossed in a light mix of rice vinegar, mayonnaise and dill. Not as crunchy as a cucumber salad made with cross-cut cukes, it also provides a greater light/dark contrast when set on a plate than a traditional cuke salad. It's colorful appeal would make a visual splash on a plate that includes a dark meat.
